About the wine
With the special Olimpia Lambrusco Grasparossa di Castelvetro DOC from 2018, you will positively surprise your friends. With sensitivity and intuition, the winemaker from the Italian winery Azienda Agricola Villa di Corlo masters this red wine in the fertile and blooming countryside of Emilia-Romagna.

Tasting note
Dark red color with almost black, purple reflections. Intense nose with notes of dark cherries and plums. Fresh and densely concentrated on the palate with aromas of blackberries, plums and earthy spices.
Culinary recommendation
Goes well with prosciutto parma, lasagna and cherry tartlet.
Vinification
The must is cooled to temperatures of around 0°C immediately after the grapes have been pressed and stored at this temperature. When a batch of Lambrusco is required, the temperature of the required must is allowed to rise and pure yeast is added to it. As soon as the desired residual sweetness is reached, fermentation is interrupted by means of strong cooling and the wine is filtered and bottled.
