Tasting note
Merlot Riserva Kastelaz has a dense, purple-red color. In the nose, it develops an inviting, complex, spicy-fruity aroma. Juicy and with lots of race and character, the wine presents itself on the palate with spicy fullness, soft tannin and a mineral, persistent aftertaste.
Culinary recommendation
Goes well with braised lamb, beef tenderloin with pepper sauce, tagliatelle with mushrooms or aged hard cheese — ideal for hearty dishes with intense aromas.
Vinification
Mash fermentation for about 10 days in steel tanks followed by acid degradation in wooden barrels. Aging for 18 months in French barriques, then long bottle aging.
