Over the course of 18 years of slow transformation in the cellars, Dom Pérignon increases its energy and reaches a new peak of essential, radiant energy with the 2nd plenitude level. This degree of development can be felt at all levels: The champagne gains in depth, body, intensity, length on the palate and, above all, in longevity. Dom Pérignon vintage champagnes are brought to a new level of maturity with a lot of patience. We call this level Plénitude 2, the second life of a Dom Pérignon.

Culinary recommendation
Vintage 2006 Plénitude 2 by Dom Pérignon expresses a soft and warm character. This can be highlighted with seafood such as scallops or scallops. Veal and Jerusalem artichoke reveal the hugging and tender character of the wine.
Vinification
Dom Pérignon's winemaking philosophy is minimalistic, free from any manipulation. The assemblage is the basis for the signature of Dom Pérignon. It is guided by timeless principles. The slow and long aging on the yeast is the price for making Dom Pérignon one of the most complex wines of all. Time is part of the Dom Pérignon formula. The period of active maturation on the yeast in the darkness of the cellars, which allows each vintage to develop. For Dom Pérignon Vintage 2006 Pléntitude 2, this slow metamorphosis took 18 years. The weather in 2006 was mostly warm and dry, although there were also contrasts. There was a heat wave in July, but August was unusually cool and humid. The almost summery weather in September was decisive for the vintage, as it dried out some areas with botrytis and enabled the grapes to reach above-average ripeness. The harvest began on September 11 and lasted almost three weeks.
