Tasting note
The wine has a rich and inviting nose with notes of citrus, apricot, peach, roasted nuts and spices. The palate is powerful and packed with fruit, yellow apples, roasted almonds and freshly baked brioche with stone fruit. The fresh acidity gives the wine balance and length in the aftertaste.
Culinary recommendation
Fantastic wine with pork tenderloin with glazed apricot jam, creamy cannellini beans and herb salad or glazed butternut squash gnocchi with creamy sage sauce and roasted pumpkin seeds.
Vinification
The grapes come from Stellenbosch, two plots from Helderberg for more freshness and acidity and the other plot from a warmer western slope on Simonsberg for the texture and structure of the wine. All three plots were harvested at various degrees of maturity and vinified separately. The grapes were pressed as a whole bundle and fermented in 228 liter French oak barrels. Further aging took place for 11 months in 33% new barrels from France, which were rolled regularly once a month. Finally, a strict selection was carried out and the wine was assembled at the beginning of February.
