About the wine
Vecchie Vigne Historical is Umani Ronchi's homage to Verdicchio. This top wine uses the best grapes from vines over 50 years old, which grow on a small plot of land in the historic Montecarotto vineyard in the Castelli di Jesi Classico area. The cru matures for a total of five years and develops a wonderful deep mineral character.

Tasting note
Nice straw yellow color with greenish reflections. Multi-faceted bouquet with fresh floral and citric notes, a touch of sea salt and ripe notes of beeswax. Pleasantly lively and mineral on the palate. The finale is wonderfully long.
Culinary recommendation
Goes well with oven-baked poultry, fried or grilled sea fish and stuffed pasta specialities.
Vinification
The grapes are harvested by hand and carefully pressed. To maintain quality, immediate cooling is carried out, followed by natural clarification through gravity. Fermentation is carried out in stainless steel tanks at 16°C to 18°C for 15-20 days. After this step, the young wine ages in concrete tanks for 18 months, keeping in contact with the yeast. The wine is then transferred to a small stainless steel container through natural sedimentation, where it rests for about 36 months. After bottling, the Verdicchio remains in the bottle for a further 6 months before being released for sale.
