About the wine
The calcareous soils in Andalusia offer the winemaker from the Spanish winery Cota 45 everything he needs to live out his craft and produce a wine for discerning connoisseurs. We have a special, discreet Palomino from 2021 for you, which is a source of enthusiasm among many wine connoisseurs. The Flaschenpöstler promise a culinary experience when you serve this Palomino with light dishes or an aperitif.

Tasting note
Complex bouquet of yeasty and spicy notes. Aromas of bread dough, apple, lime zest, fennel seeds and dried herbs. Fresh and salty on the palate, like all wines from the UBE line with earthy notes and a long finish.
Culinary recommendation
Goes well with tapas, fish, Japanese cuisine, light dishes.
Vinification
Cota 45 presses whole grapes, which is gentle and results in a very clear, clean must. Fermentation takes place in used Manzanilla sherry barrels without temperature control. The wine is then aged in the same barrels for 9 months. During this time, a thin layer of yeast, which is called pile, is formed. The pile layer protects the wine from oxidation and significantly shapes the taste.
