About the wine
Grillo is a cross of the two varieties Catarratto and Zibibbo (Moscato) native to Sicily. While Catarratto brings a lot of freshness, Grillo gets its fruity aromas from the other parent Zibibbo.

Tasting note
Straw yellow color. On the nose, typical aromas of white melon, medlar, apricot, pineapple and beeswax. Crunchy and fresh on the palate with moderate aclohol content.
Culinary recommendation
With raw fish but also fried and fried fish or vegetables, with pasta or risotto with fish sauces, with mild cheese and with charcuterie.
Vinification
Harvest between August 31 and September 5. The grapes are cooled to 12-14°C, destemmed and gently pressed, then cooled to 2-3°C for clarification. When the sediments have settled, fermentation begins at 14°C for 14-20 days. Until bottling, the wine remains on the fine lees during weekly battonage.
