About the wine
This dominant Cabernet Sauvignon 2015 — TAUS Seleccion is a hit right down to the last drop in the truest sense of the word! With sensitivity and intuition, the winemaker from the Spanish winery Hacienda del Carche masters this red wine in the graceful landscape in Levante. Tasting note
The Tavs Selección impresses with its very dark ruby-red color with purple reflections. The nose is dominated by fruit aromas of black berries, dried fruits, ripe plums and lots of spice. On the palate, the full-bodied type with pleasant balsamic notes and in turn a lot of fruit concentration is pleasing. Well-integrated tannins, a light oak note and a velvety finish make this wine a real drinking pleasure for every occasion.

Vinification
The grapes for Tavs grow on vines over 50 years old at an altitude of approx. 550 meters. At this altitude, the grapes ripen a little more slowly and find peace on cool nights to form fine and elegant fruit aromas. After manual harvesting, the grapes are fermented in steel at controlled temperatures. The second fermentation (malolactic fermentation) then takes place in barriques, using 90% French wood and around 10% American oak wood. After a further aging in wood of approx. 4-5 months, the wine is allowed to mature in the bottle for a further period of time before it is sold as a Semi-Crianza.
