Tasting note
Mineral-based bouquet, minimally oxidative, aromas of chamomile, apricots, mirabelles, bread yeast and fennel. Impressive start on the palate, extremely delicate, very compact, nuanced, well-structured and infinitely long-lasting. The minerality and tartness typical of this vineyard.
Culinary recommendation
It goes well with fried fish such as sea bass or sea bream, with scallops or delicious seafood tapas. It also develops its elegant freshness and mineral depth with creamy risotto with citrus notes or young goat cheese.
Vinification
The Xarel-lo grapes are fermented in barriques. Traditional bottle fermentation with natural cork. Aged on lees for over 100 months. Brut nature, no sugar added. Decorgement by hand without freezing.
