About the wine
“Sei Caselle” stands for the six small plots on which the Negroamaro grapes from the Tagaro family grow. A dark, spicy and honest wine. Not an imbecile, but a silent hero — powerful but not rough, sensual, but with a backbone. Was awarded 90 out of 100 points by James Suckling.
Tasting note
The SEI CASELLE Negroamaro is full and full of character. On the nose, aromas of ripe red fruits develop, accompanied by fine spicy notes such as black pepper and a hint of licorice. On the palate, it is balanced, with soft tannins and a pleasant structure. The wine has depth, elegance and a persistent finish that reflects its origin from sun-drenched Salento.
Culinary recommendation
Goes well with hearty meat dishes such as roast beef, lamb or game, as well as spicy pasta creations and aged cheese. Ideal for hearty meals with a Mediterranean character.
Vinification
The grapes are destemmed and first macerated at 4—5 °C for 48 hours without fermentation taking place. This is followed by the addition of yeasts and the temperature-controlled fermentation with mash contact until the end of fermentation, followed by gentle pressing and biological acid degradation (malolactic fermentation).
