About the wine
The Sobaja Sauvignon comes from a unique wine-growing region in Friuli, which is protected by the Carsian Alps and tempered by the Adriatic Sea. Until fermentation begins, the grapes (which are harvested in the earliest hours of the night) are protected from oxidation in all phases by precise temperature control. Fermentation at controlled temperatures and long storage on lees make it possible to highlight the specific characteristics of the grape varieties and the terroir.
