A total of seven vineyards on the estate, which are planted on both clay slate and table mountain sandstone, contribute to this wine. Early-picked grapes give the blend a fresh backbone, while the ripened grapes give the wine a generous taste and mouth-filling richness. Semillon, a traditional blending partner for Sauvignon Blanc, plays an important role in reducing racy edges and contributes to aging potential. In this vintage, the majority of the semillon is fermented in old oak barrels, some of which are subjected to malolactic fermentation to improve the width and texture on the palate. A number of vineyards, mostly planted with clones SB11, SB316 and SB317, contribute to this wine. Further aromatic complexity is achieved by using a range of yeast strains, each selected for a range of fermentation conditions. Bottled in June 2023.
