Vinification
Before fermentation, the expression of the terroir is maximized by prolonged contact between the clear juice and the fine yeast grounds. Fermentation at a cold temperature ensures slow fermentation, which reveals the complexity of the wine. The 8-month aging on fine yeast refines the style and reinforces the balance.
