Tasting note
The beautiful length in the mouth and the right tension of our Saint-Aubin Premier Cru Charmois are accompanied by a depth and complexity that only beautiful slopes can give the wine. Located at the geological junction with Chassagne-Montrachet, our iron-rich property is characterized by stony and flat soil with good drainage. The origin of its name remains uncertain: Is it an area formerly planted with hornbeams or is it more likely a derivative of hornbeam, a term that describes wastelands and scrublands that grow naturally on barren soils.
Culinary recommendation
Perfect with seafood, grilled fish or white meats.
Vinification
The grapes come from the Le Charmois Premier Cru vineyard in Saint-Aubin. After manual harvesting, the grapes are gently pressed. The must is fermented in stainless steel tanks at a controlled temperature to preserve freshness and fruit aromas. The wine then matures on the fine yeast.
