Vinification
In the vineyard, particular emphasis is placed on integrated and environmentally friendly management as well as on late and very selective harvesting. After the obligatory whole grape pressing with partial maceration, the must is traditionally spontaneously fermented in large wooden barrels after a preliminary clarification. This is followed by a long storage period on the yeast so that the wines round off naturally.
