Tasting note
The Rossaia Amarone appears in a wonderful, clear dark red. It has an intense scent of cherries, black currants and spices. This is followed by a wonderful, full and pure taste with notes of ripe fruit, cocoa, coffee and a hint of vanilla. The taste is elegant and silky smooth due to storage for 18 months in large oak barrels. Enjoy pure Italian joie de vivre with a long finish!
Culinary recommendation
Recommended by Flaschenpöstlern: Rossaia Amarone della Valpolicella DOCG goes well with roasts, hearty meat dishes and game.
Vinification
Amarone is the name for a dry red wine from Veneto. At Rossaia, 100% of the grapes are harvested by hand. The special feature is that the grapes from the varieties Corvina and Corvinone, Rondinella and Molinara, from which Amarone is produced, are air-dried for two to five months on wooden trellises under roof (Appassimento). During drying, the sugar concentrates in the berries, which often produces over 15% alcohol in Amarone. Even the constant turning of the Amarone grapes during drying is a great effort. In doing so, they lose up to almost half of their weight, leaving behind virtually raisins. The yield is reduced dramatically. After fermentation and pressing, the Rossaia is stored in oak barrels for 18 months.
