The winemaker from the Italian winery Damiano Federici is absolutely proficient in his craft. Tasting note
Light straw yellow, aromas of flowers, mint and linden. In the mouth, it is spicy, mineral and juicy with good tension.
Culinary recommendation
Goes well with dishes based on raw fish, but also white meat and medium-aged, rather mild cheese.
Vinification
Fermentation at controlled temperature for approximately 30 days. After fermentation, the wine is peeled and left on the fine yeast for 60 days with frequent bâtonnage. It then rests in steel tanks for 40 days, is then filtered and matures in the bottle for at least 30 days.
