Tasting note
Rkatsiteli is an autochthonous Georgian grape variety, and one of the oldest in the world. There is evidence that the grape was cultivated 5000 years ago. It is a white grape, but it is vinized like red wine - i.e. ferments in contact with the peel, which gives the wine the orange color and gives it a lot of structure. Very well balanced with fresh acidity, and high intensity. aromas of honey. Accessible but full of character. Only 2,700 bottles produced.
Culinary recommendation
Goes well with grilled fish, poultry, aged cheese or Georgian specialities such as chinkali and khachapuri.
Vinification
Fermented on our own yeasts in Qvevri (classic clay amphoras) with a punch-down every 6 hours. Then aged for 9 months in the same Qvevris. Unfiltered and unembellished.
