Tasting note
In the glass, the wine is deep ruby red. On the nose, intense aromas of ripe red fruits such as cherries and plums develop, accompanied by fine spicy notes and a touch of dried fruit. On the palate, the ripasso is full-bodied and smooth, with soft, well-integrated tannins and a pleasant freshness. The aftertaste is long, warm and balanced.
Culinary recommendation
It goes well with roasts, braised meat dishes, game, hearty pasta dishes or aged cheese.
Vinification
The wine is made using the traditional ripasso method. This involves fermenting a young Valpolicella a second time on the skins of the previously produced Amarone. This process gives the wine additional aromas, more body and a denser structure. The wine is then aged in oak barrels for several months, where it develops additional complexity and a nice balance.
