Tasting note
Mirabelle and green apple, followed by lime and peppermint. Playful fruit sweetness and tremendous juiciness provoke dangerous drinking flows.
Culinary recommendation
Goes well with light Asian cuisine or simply as an aperitif in the sun.
Vinification
The golden yellow Riesling grapes were selectively harvested by hand relatively late, gently pressed and vinified in a very anti-authoritarian manner. The fermentation started with spontaneous yeast lasted for 3 long months, down to the residual sugar content of 11 grams/liter; the yeast did not want or could not ferment more.
