Tasting note
In the bouquet, intense aromas of fresh citrus and pink grapefruit with a touch of freshly ground white pepper and fine mineral notes. Classic notes of nectarines, apricots and slightly toasted almond nougat marzipan aromas of spontaneous fermentation and ripening in French barriques. Very expressive, pure and lively on the palate, once again the aromatic citrus fruit (grapefruit) dominates, this time softly embedded on a smooth phenolic structure, while lively acidity and clear minerality give Reserve Bin A its elegance, fragrant freshness and even more length in the finale.
Vinification
The grapes are picked by hand in small containers and then pressed whole. Some of the juice is gradually filled directly from the press into barrels and subjected to natural fermentation. Each new and aged French oak barrique is its own unique 225 liter barrel. Fermenting and maturing with regular yeast stirring results in a better mouthfeel and more complexity. 100% malolactic fermentation.
