Tasting note
Pale yellow. A highly complex bouquet is reminiscent of mineral-accented pears, quinces, oranges and spicy flowers, together with hints of aragon and ginger. Juicy and spicy on the palate, it offers concentrated aromas of mandarin, anjou pear, persimmon and honeysuckle, which absorb a smoky nuance in the back half. Power and tenderness, ends extremely long and precise with repeated florality and a touch of smoky yeast. This finely detailed, lively wine offers excellent value for money.

Vinification
The base wine is vinified in steel tanks. After assembly, bottle fermentation takes place in a horizontal position for at least 48 months. The date of dégorgement (removal of fine yeast) is individually printed on each bottle. A shipping dosage is deliberately avoided, i.e. it is a Brut Nature.
