Tasting note
Velvety ruby red. Spicy and mineral in scent Aromas of ripe plum cherries green peppers and cedarwood with some marzipan and dark chocolate. Present on the tongue of tight stature with strength and expression. It has an unobtrusive spiciness, is very rich with well-structured but not superficial tannins and subtle minerality. The wide variety of aromas on the palate lasts a very long time.
Culinary recommendation
Goes well with sophisticated meat dishes, game and aromatic cuisine and dishes with hearty sauces in general. Can also be combined with strong cheeses.
Vinification
Grapes with a very limited yield are picked by hand when they are ripe at optimum maturity. After desiccation, 3-5 days of storage in a cold room (cold maceration) followed by mash fermentation in an open tank. Aging in French oak barrels with at least 15 months of aging, followed by 8 months of bottle storage.
