Tasting note
It looks very complex and shows fine roasted aromas, some vanilla, plus aromas of ripe pears and some chervil. The start brings a lot of delicacy and velvety, in the middle section the Meursault is animating and profound and ends in a long, salty finish.
Culinary recommendation
Goes well with fish — from grilled sea bream and trout to steamed zander or a fine fillet of monkfish.
Vinification
Careful handpicking. The grapes are pressed with little pressure, then statically pre-clarified and fermented in steel tanks. The aging on fine yeast takes place for just under a year in French wooden barrels, in which the biological acid degradation also takes place.
