Tasting note
Dense, almost impenetrable ruby. Ripe black cherries on the nose. orange jam, rum pot, sage and rosemary. Tightly woven and complex. Complex and very pleasant on the palate. Prosek Gracin, Dalmatian dessert wine that is produced as an incentive for strength, relaxation, joy and love. Brilliant taste experience with a very long shelf life
Culinary recommendation
Goes well with pastries, panettone or a piece of gorgonzola.
Vinification
The best prošeks are produced and grown in small family businesses using the passito method. The overripe grapes are dried on straw mats or films for a few weeks and then destemmed. The loss of moisture increases both sugar and relative extract values. For high-quality products, only pre-flow musts are used, which slowly ferment under cooling (either in deep cellars or in refrigerated fermentation tanks) until fermentation stops by itself at around 15-16 percent alcohol by volume. Despite maximum sugar conversion, these wines still contain a residual sugar content of over 120 grams/liter.
