Tasting note
In a bright, pale yellow tone with fine green reflections. The bouquet combines fresh, crunchy citrus notes with juicy apples and lemons, complemented by subtle notes of almonds and roasted hazelnuts. On the palate, it is fresh and accessible, with an impressive richness and a citrusy, ripe fruit harmonizes with nutty nuances. The balanced balance between minerality, floral elegance and structural depth gives this wine remarkable intensity and pleasant volume.
Vinification
The hand-picked grapes are gently processed with pneumatic presses before the must rests and is clarified for 12 hours. Fermentation starts spontaneously with wild yeasts in temperature-controlled cellars, partly in stainless steel, partly in wooden barrels (20-30% new, with 5-year rotation). The vinification takes place according to Burgundian tradition on yeast with batonnage, which gives the wine richness and terroir aromas. Depending on the vintage, it undergoes malolactic fermentation. Each plot is vinified separately, then combined after tasting and lightly filtered as needed. After a period of rest in the tank, bottling takes place, followed by bottle aging.
