Tasting note
On the nose, there are intense aromas of ripe wild berries, black cherries, plums and dark spices, accompanied by a touch of licorice, dried herbs and subtle roasted aromas. Full-bodied, round and juicy on the palate, with well-integrated tannins, ripe fruit and a spicy-warm finish. A powerful, aromatic garnacha in typical Mediterranean style with a nice balance between fruit and spice.
Culinary recommendation
Ideal with grilled or braised meat, tapas, lamb chops, aged Manchego cheese, paella with meat, chorizo dishes or baked vegetables with peppers and rosemary.
Vinification
Selective harvesting, traditional mash fermentation in stainless steel tanks, followed by brief aging in wooden barrels (partly in barriques or tonneaux, depending on the style) to accentuate structure and aromatic depth without masking the fruit. The Garnacha grapes mostly come from old vines on soils rich in lime and slate — typical of Campo de Borja.
