Tasting note
The Overture 2021 features fresh aromas of plum, blackberry and cherry, complemented by seductive notes of dried rose petals, forest soil, and earthy minerality. On the palate, juicy aromas of blackcurrant, blueberry and wild strawberries unfold. The wine has a velvety texture with fine, powdery tannins. Subtle notes of coffee and dark chocolate round off the long finish with well-integrated acidity.
Culinary recommendation
It goes well with grilled beef, lamb dishes and aged cheese.
Vinification
After manual harvesting, fermentation takes place with natural yeasts from the vineyards. It is aged for 19.5 months in new French oak barrels.
