Tasting note
Very elegant blanc de blanc with typical notes of brioche, yellow stone fruits and lemon zest. Elegant on the palate, fresh, with fine perlage and a precise, long finish.
Culinary recommendation
Goes well with festive appetizers, sushi, freshwater fish and poultry liver terrine.
Vinification
Around a third of the grapes are harvested later to give the wine more fullness. Vinification in used barriques. After the second fermentation in the bottle, the Om de Fer remains on the yeast for 24 months. Dosage 4g/liter.
