Tasting note
The short mash fermentation, which usually lasts one night, creates the typical Oeil de Perdrix. The color reflects the partridge's eye, salmon-colored with pink reflections. The nose is impressive and has a rich expression of red berries. The palate is racy: At first it is subdued, but then quickly becomes full-bodied with a unique zest and complexity.
Vinification
Extreme conditions for the vines due to the thin layer of soil lying directly on the rocks. The vineyards consist of limestone and sandy soils and are located at an altitude of between 430 and 550 m above sea level. After harvesting, the grapes are gently pressed and left on the mash for 18 to 24 hours for stronger color extraction. After withdrawal, the young wine is aged in stainless steel tanks and bottled in spring.
