About the wine
With the fine Oeil de Perdrix AOC La Matze from 2015, you will positively surprise your guests. To get a feel for the hilly and mountainous landscape aesthetics of Valais, there is no way around this rosé wine, which the Swiss winery Adrian Mathier masters with a keen sense of texture.

Culinary recommendation
Poultry, pork and red sea fish. Excellent with a Valais-style pork cutlet, filled with apricots and gratinated with raclette cheese.
Vinification
Ein paar Worte zur Vinifikation: Es sind die Pinot Noir Trauben für den Luzifer-Wein. Vor dem Einsetzen der Gärung wird der Vorlauf von der Maische abgezogen. Ausschliesslich aus diesem edlen Most wird der Oeil-de-Perdrix gekeltert. Der Wein wird also frühzeitig von der Maische des Luzifer abgezogen, man nennt dies „Tête de Cuvée“. Dieser Vorlauf von höchster Güte wird danach traditionell im Edelstahltank vergärt und trocken ausgebaut.
