Tasting note
The Moulin à Vent is a thick purple-red. On the nose, aromas of ripe peacocks, black cherries, violets, candied fruits and some graphite inspire. On the palate, the wine is dense and full-bodied with lots of dark fruit, a velvety mouthfeel, juicy acidity and elegant tannins. An extremely balanced and refreshing Gamay with a long-lasting aftertaste.
Culinary recommendation
Goes well with stews, light meat dishes, grilled fish, cheese.
Vinification
The grapes for this Moulin à Vent come from old plots which are cultivated with particular care. The grapes are picked by hand and vinified in Chambolle using the classic method (no carbonic acid maceration). Fermentation takes place with approx. 10% whole grapes. The aging takes place in 500-liter oak barrels. This is how serious, elegant and graceful Beaujolais with great aging potential are created.
