Tasting note
The wine has a purple-purple hue. On the nose, aromas of very ripe red fruits, spices and licorice develop. On the palate, it has a tannic structure that is still somewhat firm but is covered by a balanced and fruity fullness.
Culinary recommendation
It goes well with dishes such as coq au vin, grilled lamb or aged cheese.
Vinification
The grapes are harvested by hand. Depending on the plot and grape quality, part of the harvest is destemmed for a “Burgundian” vinification, which is carried out with pigeage (feeding in the pomacehat) and reassembly (pumping around). The other part is used as whole grapes for 10 to 15-day semi-carbonic maceration. The wines made in Burgundian style mature in large barrels (500 liters) for 10 to 12 months, while the wines produced in semi-carbonic maceration are aged in stainless steel tanks.
