Vinification
Morgon Côte du Py is Stéphane Aviron's most powerful and earthy wine — already available, but with great aging potential for up to ten years. The grapes come from the slopes of an extinct volcano at 1,150 meters above sea level — one of the most renowned terroirs in all of Beaujolais. The vines grow on sunny south-facing slopes on steep areas with volcanic soil, crossed by slate and bluish rock formations. The grapes are first vinified separately and only brought together for final blending and bottling. The whole grapes go through temperature-controlled fermentation and subsequent maceration in stainless steel tanks for ten days. The aging takes place for twelve months in used Burgundy barriques (228 liter barrels, three to seven years old) to preserve the fresh, clear fruit character — without any noticeable woody notes.
