About the wine
If we can offer something special for Christmas 2021, it's this powerful Cabernet Sauvignon 2018 — Metochi Chromitsa Protected Geographical Indication Mount Athos. The wine-growing regions of the Greek winery Tsantali stretch across the landscapes in Macedonia, where the experienced winemaker produces this red wine. Culinary tip from Flaschenpost team: This Cabernet Sauvignon is excellent with red meat or ribeye steak.
Tasting note
A medium intensity ruby red wine. The nose is offered a nice selection of red cherries, fresh herbs and spicy oak aromas. The palate is round and velvety. Medium finish
Culinary recommendation
Goes well with roasted vegetables, red meat, sausages and soft and hard cheeses.
Vinification
Traditional red wine pressing in open vats. Skin maceration at low temperature (10-12°C) for 48 hours. Fermentation in stainless steel tanks at ± 22 °C for ± 12 days. Fermentation is followed by malolactic fermentation in well-roasted small oak barrels. Ageing: 8 months in 300 l French oak (40% 1st filling, 60% 2nd and 3rd filling). Storage: 6 months in bottle before release.
