Tasting note
Intense aromas of dark plum, mulberry and licorice are accompanied by a touch of fresh mint. On the palate, the wine has a juicy, generous middle section supported by ripe tannins. The long finish is characterized by fine notes of pepper and wood spices, which give the wine additional depth and elegance.
Culinary recommendation
Goes well with a wide selection of game dishes — especially with ostrich meat.
Vinification
The mash was cold macerated overnight at 12°C to gently extract aromas and colorants. The alcoholic fermentation was then carried out at 24-28 °C in open stainless steel tanks using a selected yeast strain. Immediately after the main fermentation was complete, the mash was gently pressed to avoid extracting hard tannins. The wine was then rearranged in 225 liter barriques for malolactic fermentation (biological acid degradation).
