Tasting note
Straw yellow color with golden reflections. Intense scent of ripe figs, acacia honey, dried apricots, candied fruits, apples and a touch of saffron. Rich, sweet, soft and warm in taste, perfectly balanced with elegant acidity.
Culinary recommendation
Goes well with a lukewarm tarte tatin or apricot compote!
Vinification
On a selected hillside, bordering a small river, the only “Botrytis cinerea” wine in the entire Marche is produced. The Sauvignon blanc grapes are harvested by hand when there is optimal fungal infection and then gently pressed. Fermentation takes place in steel tanks at 15°C for approximately one month. The young wine is then aged in small steel tanks. Only just under 10,000 bottles of this specialty are bottled.
