Tasting note
Fresh, flowery and full of life. Tropical ripe fruits, fine citrus notes and a gentle residual sweetness create a seductive interplay of aromas. The lively acidity and complex minerality give it tension and length — a wine with radiance and character.
Culinary recommendation
A poem about fritto misto, baccalà mantecato, oven-baked chicken. It also shows its best side with spicy hard cheese.
Vinification
Some of the organically grown grapes ripen longer on the vine and are vinified separately. During fermentation, the temperature is controlled with great care to preserve the freshness of the gently pressed berries. They are then refined in French oak before the two young wines are brought together.
