Tasting note
Complex aromas of ripe red berries, fully ripe cherries and plums, plus fine roasted aromas and hints of fresh leather. On the palate, the wine shows great spiciness and a lot of melting. The tannins are silky and leave a long-lasting finish.
Culinary recommendation
Goes well with lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
After careful handpicking, the grapes go through cold maceration before fermentation begins. The alcoholic fermentation takes 18 to 20 days before the mash is pressed and the young wine is moved to barrique aging. The aging in barriques takes 16 to 20 months.
