Tasting note
Intense ruby red color. Warm, complex aroma with notes of ripe berries: blueberries, blackberries and wild strawberries. Notes of plum, black cherry and vanilla, with slight hints of tobacco, dark chocolate and green pepper at the end. In the mouth, it is warm, elegant, mature and complex. Very long finish.
Culinary recommendation
Goes well with meat dishes, grilled meat, braised meat, game.
Vinification
Double Reasoned Maturation (DMR) process is already being used in the vineyard. This technique involves pinching off a few branches before the grapes are fully ripe so that the grapes start to ripen on the vine, resulting in a higher sugar concentration. This gives the wine even more structure and strength. The selected healthy grapes are crushed and then fermented. The wine is then aged in cement tanks for 24 months. After bottling, the wine continues to mature for at least 6 months.
