Tasting note
Comes in light straw yellow with golden reflections. On the nose, elegant aromas of white flowers, orange blossoms and citrus fruits develop, accompanied by subtle notes of roasted almonds. On the palate, the wine is juicy and lively with a pleasant balance of freshness and depth. Aromas of stone fruit such as vineyard peaches and ripe citrus fruits give it a fine fruitiness, while the harmonious acidity creates tension. A touch of herbs and subtle wood notes from barrel aging give it additional character. The aftertaste is long-lasting, slightly mineral and elegant.
Culinary recommendation
This wine goes well with Mediterranean cuisine, fish dishes, seafood stews, grilled fish, cod tripe, stockfish croquettes, seafood fideuá and aioli.
Vinification
The grapes come from the “Las Serratilla” plot with an area of 3.5 hectares and an age of the vines of 25 to 30 years. The soil is sandy-loamy with a yield of 5,000 to 5,500 kilograms per hectare. The manual harvest is carried out in small boxes of 10 to 15 kilograms during the cooler times of the day, followed by selection directly in the vineyard. After destemming without crushing, a preferential maceration of 3 to 4 days takes place. 50% of the grapes are fermented on the skins in stainless steel tanks for 8 to 10 days and then aged on fine yeast. The remaining 50% is fermented in large French oak barrels without temperature control. No sulfur dioxide is added during vinification. The wine ages in French oak barrels on fine lees for 6 months and spends a further 3 months in the bottle before being launched on the market.
