Tasting note
Intense ruby red with garnet reflections. Complex and enveloping bouquet with notes of ripe red fruits such as cherry and black cherry, followed by a touch of sweet spices, cocoa and tobacco, as well as slight nuances of licorice and leather. Dry and full-bodied, with well-structured and soft tannins. On the palate, aromas of dried fruit, dark chocolate and spices develop, with a pleasant alcoholic note that gives warmth.
Culinary recommendation
Perfect with grilled red meats, roasts, game, aged cheeses and mushroom-based dishes. It also goes well with braised and steamed meats and is ideal as a meditation wine.
Vinification
The grapes are harvested manually and then dried for a few months, losing some of their water content and concentrating sugar and aromas. Fermentation takes place at a controlled temperature, followed by a long refinement in oak barrels, which gives the wine complexity and roundness.
