Tasting note
Bright and light in appearance The nose is rich in aromas of lemon, white peach and nectarine, followed by a wide range of intense aromas from tropical fruits to herbal notes with a strong minerality. The palate is structured and distinctive with well-balanced acidity. The wine is fresh and lively and ends with a long and crisp finish.
Culinary recommendation
Goes well with seafood and crustaceans, as well as with summer salads. Try this wine with tuna and mango cerviche.
Vinification
A great deal of attention was paid to expressing the Klein Constantia style in this wine. It consists of a mixture of different plots from the winery, which were all vinified separately and finally carefully blended together. A selection of 36 different blocks was used, each separately picked and vinified at 4 o'clock in the morning to create the perfect blend. Only the free-range juice was extracted and used from a combination of whole bunches of grapes and destemmed grapes. 25% of the fruits were in contact with the skin for 12 hours, 80% were spontaneously fermented, 20% were inoculated with special yeast to increase complexity. The fermentation took up to 2 months and the further aging took place for 6 months on lees, 10% of the wine in neutral 500l oak barrels
