Goes well with delicately flavored fish, sushi, aged cheeses

Jakot wine is made from pure Friulano grapes, which come from around 60-year-old vines on marly, sandstone-rich soils. The yield per hectare is around 40 quintals and is kept low to promote the quality of the fruit at the expense of quantity. All processes, from vineyard to cellar, take place with as little intervention as possible. The grapes are harvested by hand and fermentation takes place spontaneously and without temperature control. The maceration on the skins of the must takes around 20 days, while the liquid ages in large barrels for around 30 months and in steel for a further 3 months before being bottled. No clarification or filtration.
