About the wine
When the Reinecker and Keller families took over the winery at Isteiner Klotz at the end of 2018, they had the intention of replacing the Cabernet Sauvignon sticks with Pinot Noir, as they wanted to rely entirely on local varieties. After vinifying the Cabernet, however, it quickly became clear that this would be a loss - the wine has so much varietal diversity and yet terroir character that they left the vines standing. Definitely a good decision!

Tasting note
Ripe dark fruits on the nose with the typical Cabernet, peppery cherry aroma. Almost Burgundian on the palate with a very finely woven tannin structure.
Culinary recommendation
Goes well with beef stew, boeuf bourguignon, hard cheese.
Vinification
Manual harvest, fermentation with natural yeasts. Aging in French barriques, 30% of which are used for the first time.
