About the wine
François and Pierre's aim is to produce the Cuvée Instantanée regularly in order to present a “snapshot” of the respective year. The cuvée — initially pressed from around one third of Chardonnay, Pinot Noir and Meunier — was released for the first time in 2013 as Blanc de Noirs. In 2017, it consists of around 80% Pinot Noir and 20% Meunier. The bouquet features aromas of red berries, plums and juicy apples, finely spicy with notes of roasted nuts, pastries, honey and a delicate mineral touch. On the palate, showing a lot of structure, again with subtle roasted aromas, supported by a smooth acid backbone.

Culinary recommendation
Try it with a caprese salad, with juicy creamy burrata, kalamanta olives and old balsamic, or with spicy wild fowl pate with Cumberland sauce.
