Vinification
Insieme means “together” in Italian and that is exactly what makes this wine special. One wine, two brothers, one passion: 80% Pinot Noir from Graubünden from Weingut Davaz (Andrea Davaz) is combined with 15% Cabernet Sauvignon and 5% Syrah from Tuscany from the Poggio al Sole winery (Johannes Davaz). The grapes are gently fermented on the mash, then mature for 14 to 21 days and then develop their elegance and depth in French barriques. Minimal filtration preserves the authentic character.
