Tasting note
The Grand Vin 2019 is very concentrated and has dark ruby reflections. It is a nice combination of Cabernet, which contributes to its structure and structure, and Merlot, with its fineness, elegance and fruitiness. On the nose, it is characterized by a variety of aromas. There are floral expressions as well as those of candied fruit, figs, cedar aromas, licorice, and dark chocolate. The whole is complemented by anise nuances and a fine tannin structure that combines minerality, finesse and characteristic power. The 2019 is a bit fresher and finer than its predecessor and an absolute highlight from the island!
Culinary recommendation
Our recommendation: The ideal drinking temperature for red wine is a slightly chilled 16°-18°C. Flaschenpöstler tip: Grand Vin Son Mayol is ideal for pizza with mushrooms, red meat and ribeye steak.
Vinification
The grapes from the various vineyards are vinified separately and then assigned to one of the two wines. This individual selection of the various batches promotes and preserves the individuality of the two wines produced. Son Mayol benefits from around thirty-five different terroirs and thus from a combination of many different influencing factors. These include different soils (clay, limestone, sand, silt), various oriented (south, north, east, west) locations, which are mostly located on slopes, and different grape varieties. In the modern wine cellar, the team vinifies the different layers individually and according to the principle of gravity. It is only at the final blending at the end of the two-year barrel aging in one to two-year oak barrels that it is decided which layers will be used for which wines.
