Tasting note
The composition of mainly Cabernet Sauvignon and smaller portions of Malbec, Merlot, Petit Verdot and Cabernet Franc smells of ripe blackberries, dark chocolate and violets as well as nuances of cedarwood, eucalyptus and dried peaches. On the palate, this ruby red red wine from South Africa is full-bodied, with fine tannins, round and balanced. The finale reverberates for a long time to come.
Culinary recommendation
Great accompaniment to braised dishes or grilled, dark meats such as cote de boeuf. Try this red wine with braised oxtail with a Bordeaux sauce, spiced pear and celery puree.
Vinification
The grapes were harvested by hand early in the morning, and the first phase of sorting began. The various grape varieties were destemmed and not crushed as whole berries, with prolonged skin contact of 30 days after fermentation. Only the wine, obtained from a light pressing, then aged 50% new and 50% used French oak barrels for 18 months, where the malolactic fermentation also took place. Each component of this assemblage was kept separate until the last phase of blending.
