About the wine

This plot is located in the northern part of the municipality, just before the start of the gorge. The ethimological origin of this name is found in the word 'La Val, 'which in the Middle Ages referred to the depression of a relief in the ground. Together with 'Les Cazetiers' and 'Clos St. Jacques', this single location is known as one of Gevrey-Chambertin's top three.

Tasting note
Opaque, brilliant ruby red color Very clean, intense bouquet that is reminiscent of a magnificent basket of black berries. A strong, concentrated and aromatic wine, which has a high intensity. The tannins are soft and the finish is very long.

Vinification
Grapes are harvested manually. Some of the grapes are vinified including bustards (so-called 'vendange entière'). Daily weaving of the pomace hat. Duration of maceration approx. 19 days. The young wine is separated from the pomace by gravity. For 16 months, the wine is aged in French oak barrels (approx. 50% new, 50% two-year-old). These barriques are selected in particular according to the criteria of fine porosity and light toasting.
